Our Story
Shmoné is a unique NYC restaurant concept from head chef Eyal Shani. Here, we take a highly-seasonal, thoroughly market-driven approach to products and ingredients — with dishes evolving and appearing as their ingredients ripen and age. Our small size provides exciting opportunities for culinary creativity and invention — literally on a daily basis. Whereas one evening's dishes may center around just-to-market spring vegetables, menus mere days later might be built around an unexpectedly robust haul from local seas. Shmoné offers a tabula rasa of sorts for our chefs to follow their heart and indulge their inspirations without being confined by the rigors of a large-scale restaurant operation. This is the impetus behind Shmoné, an intimate, ever-evolving culinary experience powered by the dynamism that Eyal Shani has become known for. "We will cook with what we find each morning and let the dishes seduce and delight right in front of your eyes," - Eyal Shani Chef Eyal Shani Shani was born in Jerusalem in 1959. His culinary passion was first instilled in him by his grandfather, an agronomist and a dedicated vegan, who exposed him to local markets, fields, and vineyards from a young age. In 1989 he opened his first restaurant "Oceanus" in his hometown of Jerusalem. There, he developed a unique culinary language based on regional Mediterranean products: olive oil, fish, tahini, fresh seasonal vegetables, and of course, the tomato. Since opening his fine dining restaurant, HASALON, in Tel Aviv. Shani is now the inspiration and the leading chef of over 40 highly successful restaurants worldwide. Joined by his partner, Shahar Segal, the duo operates Port Said, Romano, Miznon, North Abraxas, HaSalon and Malka in Tel Aviv, as well as Miznon locations in Vienna, Paris, Melbourne, Singapore, New York & Boston. He is considered to be one of the leading figures in the Israeli culinary scene, starring in the TV series "Food for Thought" and appearing on the panel of judges during the past six seasons of Israeli "Master Chef."
